It hasn't been explained, so no worries :) It's the central mystery of the book. It will be explained eventually, promise, but for now basically all anyone has are theories that it's something in the dirt or the water.

If you're sharp, the history lesson in an upcoming chapter actually does contain a large portion of the answer, but hopefully it's subtle. :)
