I and a partner cater desserts for a fundraiser every year where we make sure that there is at least one gluten-free dessert, one diabetic-friendly, one chocolate-free, one citrus free (thank you, Dr. McKay of SGA, for alerting me to that one), one dairy-free. All desserts containing nuts inside have them decorating the top as well--AKA "no occult nuts" in the original sense of occult. Oh, and one vegan, and that includes making sure any gelatin is vegetarian.
On the other hand, we don't do low-calorie. Sorry, that's not dessert. If you leave out sugar you must have creamy goodness.
